WHAT YOU NEED:
2 Sweet Potatos
1 Can of Black Beans
1/2 White Onion
1 Can of Corn
1 Clove of Garlic Finely Chopped
Cheddar Cheese Shredded
1 Tablespoon of Mustard
1 Tablespoon of Soy Sauce
2 Teaspoons Cumin
1-2 Tablespoons Chili Powder
Salt and Pepper to taste
1 Jar of Salsa
2 Cups of water
WHAT TO DO:
Preheat oven to 350 degrees.
Start boiling a large pot of water. Once boiling add sweet potato which should be sliced thinly. This will decrease the amount of time needed to cook it.
Add onions, garlic and a little bit of oil to a hot pan. Saute until the onions are transparent.
Rinse black beans and add to pan.
Add cumin, chili, soy sauce and mustard. Gradually add the water to the bean mixture.
As beans start to cook and soften, mash them together with the onions and garlic.
Once sweet potatoes have boiled and softened, mash them (skins kept on), and add to the bean mixture. Let this cook together for a few more minutes. Add salt and pepper to taste.
Mash avocado, shred the cheese and get ready to roll the burritos.
WRAPPING THE BURRITOS:
Fill burrito with sweet potato and bean mixture, add avocado, corn, salsa and top with cheese. Wrap burrito carefully and place in glass baking tray. Sprinkle any left over cheese on top of burritos and bake for 10-12minutes, or until the shell begins to look slightly golden.
Enjoy burritos with (or without) sour cream and salsa on the side!
This recipe makes about 10-8 burritos depending how much of the filling you pack in!
